Barley & Mushroom Bowl
This is a bowl that rewards the extra step of roasting the mushrooms rather than just sauteing them.
The shiitake tearing technique matters. Sliced shiitake has a different texture and surface area than hand-torn — the irregular edges catch more heat in the oven, caramelise more, and deliver a chew that no sliced mushroom can match. Tear them into large pieces. Single layer on the tray. Do not crowd them. Roast at high heat until the edges are the colour of dark caramel.
In Chinese nutritional medicine, barley resolves damp and strengthens Spleen qi — it is one of the most useful grains for the cold-damp Oregon early spring, where patients are emerging from winter with digestive systems that need rebuilding before they can handle the rising energy of the season. Shiitake tonifies Qi and Wei Qi — the protective energy that defends against external pathogens. Maitake modulates immunity through beta-glucan content. White miso is fermented and warming. Quick-pickled radish delivers sour-pungent flavour that moves Liver qi directly. Bitter greens drain residual winter damp. GF swap: replace barley with quinoa.
